The milling yield obtained when brown rice is milled into milled rice is expressed as the ratio of weight of milled rice to weight of brown rice (weight %). In Japan, when 1st grade brown rice with head rice of 80% or more is milled, although there are differences among different rice varieties, as a rule of thumb, a milling yield of 90.5 % is obtained when the increase of whiteness relative to the whiteness of the brown rice is 20%. Overseas rice mills have a single process including both husking and milling, and it is necessary to determine the yield in going from rough to milled rice. When good quality indica long rice is milled, yield in good milling conditions, yields in the range of 65% to 67% are obtained, but when rough rice is milled to milled rice in one-pass with an Engelberg mill, the yield will be in the order of 55%.
