Head Grain, Broken Grain and Properties of Milled Rice in Japan

Head grains of brown rice are the grains other than colored grains, damaged grains, dead grains, immature grains, foreign grains and foreign matter. Broken grains of brown rice are classified as damaged grains regardless of size. Head grains of milled rice are essentially the same as head grains of brown rice from the point of view of quality, but their size must be at least 2/3 that of whole grains. Milled rice brokens are from 2/3 to 1/4 the size of whole grains and are classified separately from damaged grains. Grains less than 1/4 the size of whole grains are sifted out through a sieve with mesh openings measuring 1.7mm; such small grains are classified as foreign matter (small brokens etc.). Brokens that are also colored are classified as colored grains; brokens that are also chalky grains are classified as brokens. Brokens are classified according to size based on length compared to the length of whole grains; the length of whole grains used in this case is an average length.
