Drying of paddy involves exposing the paddy to air with low relative humidity (RH) to allow evaporation of the moisture in the grain and then removal of the moisture away from the grain. This process involves five main stages.
* Moisture removal
* Monitoring drying periods (pre-heating, constant rate, falling rate)
* Increasing drying rate at 18% moisture content (MC)
* Uniform drying
* Tempering
