The storability of rice is determined by its ability to maintain characteristics that are generally considered indispensable to rice.
The presence of degenerated kernels such as damaged or immature kernels mixed with stored rice would deteriorate the storability.
Rice is alive, therefore, it is inevitable that its viability will deteriorate (becoming old rice) the longer it is stored.
It is also quite natural from the standpoint of maintaining storability to try to protect stored rice from damage by insects and microorganisms.
Moisture content and temperature rises, respiration becomes more active, consuming more nourishment, advancing the deterioration of quality and promoting the growth of molds and insects, thus inducing the degeneration of the rice.
The storability of rice is determined from the change of characteristics of stored rice.
The characteristics of rice are expressed by means of moisture content, germination rate, enzymatic activity of dissolving various acid and chemical components, and dissolved components.
