Husking and milling rice are called primary processing. In Japan’s unique distribution process, farmers (producers) handle husking to produce brown rice, which is distributed as a product. Rice finally reaches consumers after being polished by rice millers. Outside Japan, rice mills accept wet/dry paddy for husking, and most typically mill it as well (Fig. 1)
As shown in Fig. 1, paddy has coarse contaminants removed by a pre-cleaner, is dried to an appropriate moisture content, and is then stored. Husking is done, if necessary, after further removing foreign matter of a different size from the paddy with a pre-cleaner and mill cleaner. In general, the ratio of husks in paddy is 17~24%, less than 20% in short grain varieties, 20~23% in medium grain varieties (medium bold grain, thin grain) and 22~24% in long and extra long varieties.
