In Southeastern Asian countries, including Japan, rice is an important food and is regarded as the staple food. As described above, in Southeast Asian countries, the per-capita consumption of rice is large. It is thus natural that the rice produced is first consumed by farmers themselves, and the rest, if present, is sold to other people. It is rare that farmers produce rice only as a cash crop for selling, like European and American farmers. The produced rice is distributed as the form of rough rice or after being processed into brown rice. In Japan, rough or brown rice is milled to become milled rice just before being distributed to consumers. Therefore, rice from the viewpoint of producers is “rough rice” or “brown rice”, and that from the viewpoint of consumers is “milled rice”, and sometimes “brown rice.”
