Cracking

When cracking occurs in brown rice, not only do more brokens form in milling reducing the yield, as shown in Fig. 2, but in addition rice with many brokens does not appeal to the Japanese. Also in Malaysia, when there are many brokens the rice becomes sticky, which does not appeal to the local people. Even if cracked grains do not break in milling, it is possible that rice grains will crack when the rice is soaked in water for cooking, degrading the taste.
Since cracking is thus highly related to the yield and quality of rice, in inspections in Japan cracked rice is classified as damaged rice.
