Intermittent drying (Tempering drying)
In tempering drying (intermittent drying), in which moisture in the interior of the grains is transferred to the surface as much as possible and then drying carried out again, when the drying time is held constant the drying will take place faster with higher initial moisture content, minimizing the danger of overdrying. In this sense, multi-pass drying is superior to uni-pass drying. In addition, 2-stage drying, in which rice is initially dried to about 17% moisture content, then stored in a silo until the whole harvest is completed, then undergoes finishing drying, the unevenness in moisture content among grains can be evened out during silo storage. This is also a good way to avoid overdrying.
